4 ingredient Banana Muffins

You guys! These we so EASY and great and the kids LOVED them. I made them in preparation of a HUGE snow storm coming though. We live out in the country and lose power very easily, luckily we did not but we still had these lovely little muffins to snack on after playing in the snow. You can make these in the blender, seriously. 4 ingredients, blend, pour, bake, eat! As you can see we were totally set for the power to go out with this yummy, quick, clean eating snacks!

I also made Homemade Granola and quick and easy trail mix bags! 

I really loved these warm so I popped them into the microwave for 5-10 seconds and they were amazing! I know what you are thinking looking at that list, Lisa...that is more than 4 ingredients but in general we have cinnamon, baking powder and soda on hand.

Containers - 2 muffins 1/2 purple 1/2 yellow

Ingredients

  • 3/4 cup of quick oats
  • 3 ripe bananas
  • 2 tablespoon of honey
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt

 

Directions

  1. Preheat oven to 350
  2. Greece muffin pan or add liners
  3. Place oats into blender and blend until it looks like flour about 45 second-1 minute
  4. add the rest of the ingredients and blend till smooth
  5. Pour into muffin pan and bake for 18-22 min or until toothpick is clean

NOTE: these muffins are flat at the top they are not muffin shaped because they do not have flour in them, do not judge they taste amazing. Store in a air tight container for up to 5 days...if they last that long!
