22 Calorie Caramel Iced Latte!

I am so excited right now and my summer months just got UH-MAZING!!!!!

I threw this together one warm spring afternoon heading out to ballet class for Sophia and darn if it was not amazing! Literally gave me life so I wanted to share this with you and be on the look out for other versions because I already have lots of ideas! 

Total time- 3 min  Containers- NONE yep my friends totally free

INGREDIENTS 

  • 1 cup hot brewed coffee ( you could use coffee that you brew and store in the fridge for faster coffee to tummy ratio! 
  • 1 large cup full of ice
  • 1 teaspoon of Caramel extract 
  • 1 packet of stevia
  • 4 oz of Calfia Toasted Coconut Almond milk

DIRECTIONS

  1. While coffee brews gather glass full of ice.
  2. Pour the teaspoon of extract over ice, add the packet of stevia
  3. Pour in the hot coffee followed by the almond milk. 

Enjoy your summer with this yummy treat! 

Guiltless Cookie Dough Dip

Are you kidding me! YES, Yes I want to eat cookie dough dip and not feel completely guilty and gross after! Oh and it's a bonus because I get to keep my abs after eating this! They say abs are made in the kitchen, let me tell you from my own experience this is 100% true! you can NOT outwork a poor diet. You can slay the gym all day and eat crap to get nowhere. 

But ladies!!!! we still need chocolate, we still need cookie dough! 

Well, here you go! You are welcome! 

I eat mine with sliced apples or when I am feeling really naughty my finger or a spoon if I am feeling civilized and the children are watching me ha! 

PS- DO NOT judge the ingredients or the process until you have tried it, if you X out and don't try this, you and your taste buds and waistline will be sorry!

Time - 10 min  Container- 1 blue container 2 teaspoons 

INGREDIENTS

  • 1 15 oz can of Garbanzo beans with the skin pinched off. ( see note below)
  • 1/4 cup nut butter of choice 
  • 2 tablespoons 100% pure Maple syrup
  • 1/2 Tablespoon of Vanilla
  • 1 Tbs Water
  • scant 1/4 tsp salt
  • 1/4 cup dark chocolate chunks or chips preferably 70% cocoa

DIRECTIONS 

  1.  Blend all ingredients except the chocolate chips in food processor until smooth! 
  2.  Stir in chocolate chips and enjoy! 

Serve with apple slices for an amazing snack! The kids love this too with some graham crackers!

* If you pinch the garbanzo beans the skin comes off and leaves a VERY smooth and creamy cookie dough dip. If you are in a hurry and you need to skip this it is still very good just has a bit more texture to it but added fiber! 

Almond Butter Banana Oat Bars

I have been on the hunt for a good on the go bar in the mornings when life gets crazy and this one is a winner, trust me I have tried many. This one takes the cake! 

Yields 6 bars Containers 1 bar = 1 Yellow 1/2 Purple 2 teaspoons 

INGREDIENTS 

  • 1 1/2 cups quick oats
  • 1/4 cup almond meal/flour
  • 1/4 cup coconut flour 
  • 1/2 tablespoon Cinnamon
  • 1 tsp salt
  • 1/4 cup vanilla protein powder ( sweetened with stevia) this can be omitted if you do not have any it is just for flavor and a bit of Protein
  • 2 teaspoons vanilla
  • 2 ripe bananas  
  • 1/2 cup applesauce
  • 2 tablespoons of PB or Almond butter 

DIRECTIONS

  1. Preheat oven to 350 degrees,  spray 8X8 dish with coconut oil or olive oil spray.
  2. In a small bowl mix oats, salt, cinnamon, flax and almond meal along with protein powder if using, set aside
  3. In a bigger bowl combine mashed banana, applesauce, Almond butter or PB and vanilla mix until combined. 
  4. Combine wet and dry ingredients and mix until combined, pour into baking dish
  5. Bake for about 25 min or until firm and toothpick comes out dry
  6. Allow to cool for about 10 min, cut into 6 even bars wrapping them in parchment paper after completely cooled. Store in fridge.
  7. When ready to eat heat for 20-30 seconds and slather almond butter on top and enjoy!

These can also be enjoyed cold but I love them a bit warm which helps the almond butter to melt over in nicely! These are an amazing quick go to! Recipe adapted from Joy Food Sunshine. 

Clean Dark Chocolate Fudgy Brownies

Picture this... it's girls night and your friend knows you are all trying to be good but brings these amazing looking brownies anyway.... I only had one that turned into 3!!!!! Thankfully she cut them in tiny squares. I swear I dreamed about those brownies so I went on the hunt for a clean eating recipe and I found on over at Joy Food Sunshine. I made some adjustments and oh my gosh they were so good! 

Josh picked on up after guy night looked at me before he took the bite knowing they might be "too healthy" for him and with a full mouth said WOW these are pretty good!

So next girls night I'll be bringing these and see how the girls like them!

Container Count-  1 Brownie + 1 Yellow treat swap 

INGREDIENTS

  • 6 Tablespoons of butter 
  • 3/4 cup dark chocolate chips ( I love Enjoy Life or 60-70% cocoa)
  • 2 large eggs lightly beaten 
  • 1 packet of stevia
  • 2 teaspoons vanilla extract 
  • 1/4 cup dark cocoa powder sifted 
  • 3 TBS arrowroot powder ( or cornstarch)
  • 1/4 tsp salt
  • 1/2 cup chocolate chips for mixing in

DIRECTIONS 

  1.  Pre-heat oven to 350
  2. Line a pie dish with parchment paper
  3. In a small bowl sift together Cocoa powder and arrowroot powder and salt, set aside 
  4. Add eggs and vanilla to stand mixer and beat for 1- 2 minutes
  5.  In a microwave safe container melt 3/4 cup chocolate chips and butter, stir to combine 
  6. add butter/chocolate mixture, mix until combined.
  7. Add in sifted cocoa powder, just until mixed 
  8. By hand stir in 1/2 cup chocolate chips
  9. Pour batter into pie dish, spread out evenly
  10. Bake for 18-25 min until toothpick comes out clean

I like to take them out just before I think they are done allow to cool a few min and lift the brownies out of the dish using the paper and use a knife or pizza cutter to cut 8 slices. 

ENJOY!!!!!! If you like a bit of a sweeter brownie try using regular cocoa and not dark add 1 more packet of stevia or 1/4 cup of Coconut sugar for that caramel taste, also consider a bit of melted PB on top..YUMMMMMM
