No Carb Banana Pancakes

I LOVE pancakes if you guys can not tell, I also love carbs. The meal plan I follow allows carbs amen! I tried for too many years to give up carbs all together and it worked for a bit and I lost weight but then I eventually caved eating all the carbs gaining all the weight back!

This was something I saw floating around Pinterest and thought I should try it but I disliked all the things they put in them so I made my own! My husband LOVES these and is always happy when I make them!

I have also made a blueberry sauce to pour over the top which is just frozen blueberries and some maple syrup to taste warmed in a small sauce pan and blended up. Easy peasy!

15 min total Containers 4 pancakes- 1 Red, 2 Purple, 1/2 blueservings 2 makes 8 pancakes ( if you choose to have 2 pancakes it would be .5 red, 1 Purple 1/4 blue

INGREDIENTS

  • 2 large ripe bananas smashed
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1 packet stevia
  • 2-3 tablespoons of chopped walnuts or pecans
  • 1/2 cup fresh blueberries

DIRECTIONS

1. Place Mashed banana and all the other ingredients into a bowls and stir to combine.

2. Use 1/3 cup measuring cup to place on a medium griddle, allow the pancakes to cook a bit before flipping so they do not fall apart.

3. add butter if desired and Enjoy, serve warm.

These also re heat very nicely!

Protein Packed Lemon Fluff

That moment you are scrolling Pinterest and you see lemon cheesecake stuffed strawberries! First though? Yummmm. Second thought? Not healthy. Third thought? Way too hard to make. Fourth thought? Make my own healthy version for the busy mom! YESSSSS

Meet Protein packed Lemon Fluff because I had no idea what else to call it! HA

All I am gonna say is do not let the ingredients scare you into leaving this page thinking I am crazy. I do not like Cottage cheese I have texture issues, I can only eat it with a perfectly ripe seasonal peach or fresh cut pineapple! What me, picky? noooooo ;) I have used cottage cheese to blend it up for savory dishes like my Lasagna and sweet like this one. I love it so much so just try it!

Prep time 5 minutes  Serves 3-4 container count 1 Red

INGREDIENTS

  • 2 cups of cottage cheese ( 2 or 4%, no fat-free here please)

  • 1 tablespoon 100% pure maple syrup

  • 1 packet of stevia

  • Juice of 1 lemon

  • 1 teaspoon of vanilla ( without HFCS)

DIRECTIONS

1. Place all of the above ingredients into a high powered blender or food processor and blend until smooth.

2. taste and add more stevia if needed. I like the tartness of the lemon but you may like it a bit sweeter

3. Keep in the fridge for 10-14 days & ENJOY

Side note: I serve this with berries on top and I think it would be fantastic between some pancakes or even on top of a waffle! Maybe even with a sliced Fuji apple!

Healthy Pizza Rolls

In our home, we love Friday nights! We will choose a movie, make homemade pizza and snuggle up with blankets filling up our snuggle cups! We have been doing this for months! I wanted to switch up our Tortilla pizzas for something new so this is how this recipe came about!

I love things like bagel bites and pizza rolls but I seriously hate how they make me feel these won't do that! they even burst a little at the seams with the warm pizza centers coming out a bit just like I remember! These are easy to throw together and you can have them made by the time the oven is done pre heating!

Makes 2 servings 16 Pizza Rolls

Ā

INGREDIENTS

  • 1/4-1/3 cup of your favorite Marinara or Pizza sauce ( I look for no sugar added

  • 1/2 cup shredded mozzarella cheese

  • 1 tsp dried oregano

  • 1/8th tsp garlic powder

  • 1 tablespoon grated parmesan cheese

  • 35 Turkey pepperonis chopped into small pieces

  • 2 tablespoons of water

  • 16 square wonton wrappers

  • Olive oil spray

DIRECTIONS

  1. Preheat oven to 425 and line a cookie sheet with tin foil
  2. In a small bowl mix grated parm and garlic powder set aside
  3. In a small bowl combine sauce, cheese, oregano, and pepperoni. Mix well. You do not want the mixture too saucy or they will not get as crispy
  4. place all the wrappers on your workspace filling the middle with a scant tablespoon of filling. if you over fill they will not close easily.
  5. Dip your index finger in water and run it along the edges of the wonton wrapper making sure to get the edges wet. Fold into a triangle pressing the edges together. Place Pizza roll on the pan repeat until filling and wrappers are gone.
  6. Spray pizza rolls with olive oil spray and sprinkle with cheese and garlic powder mixture.
  7. Place in the oven for about 9-10 min or unitl slightly browned on the edges and a bit crispy, let cool for a few minutes as the filling can be very hot! I love to serve this along a nice side salad! ENJOY

Protein Packed Small Batch Muddy Buddy

I was chatting away with a friend and she said ugh I ate a whole bag of Muddy Buddies in 2 days, they were so good but I will NEVER buy them again because I seriously can not control myself and I just ingested 1,000 calories! EEEKKKK we have all had those moments where in the moment it tastes so good and then the guilt sets in!

Just her talking about them made me want some, but I didn't want to ruin my progress so I set out to make a Protien Packed Small Batch Muddy Buddies with no powdered sugar. A tall order I know, but I totally pulled it off!!!!!

The best part about this recipe is that it only takes about 3 minutes to whip up the recipe, now depending on how you look at this it could be a good thing or a bad thing!
